Asian chicken with veggies (Print Version)

# Ingredients:

→ Chicken and Vegetables

01 - Skinless chicken thighs
02 - Olive oil
03 - Broccoli florets
04 - Carrot
05 - Red bell pepper
06 - Zucchini

→ Marinade

07 - Low-sodium soy sauce
08 - Sesame oil
09 - Fresh ginger
10 - Honey
11 - Minced garlic
12 - Rice vinegar
13 - Cornstarch

# Instructions:

01 - Mix the soy sauce, sesame oil, honey, vinegar, garlic, and ginger in a small bowl using a whisk until smooth.
02 - Pat the chicken thighs dry, coat them with olive oil, and soak them in half of the prepared marinade for 20 minutes to 2 hours.
03 - Slice the bell pepper, zucchini, carrot, and broccoli into bite-sized pieces.
04 - Heat the oven to 200°C. Spread out the chicken and veggies on a baking sheet, pour the remaining marinade on top, and bake for 25-30 minutes.
05 - Once out of the oven, let everything sit for a few minutes, slice the chicken, and dish up to enjoy.
