Pat the chicken thighs dry, coat them with olive oil, and soak them in half of the prepared marinade for 20 minutes to 2 hours.

Slice the bell pepper, zucchini, carrot, and broccoli into bite-sized pieces.

Heat the oven to 200°C. Spread out the chicken and veggies on a baking sheet, pour the remaining marinade on top, and bake for 25-30 minutes.
